What are you doing this Thursday? If lush Mexican food is your thing, read on. Derby’s latest restaurant is hosting a VIP launch party on Thursday, 30th June 2016, and you may just get the chance to experience an authentic Mexican experience.
MEXIco officially opens its doors on Friday, 1st July at the Intu Derby, but I have two VIP tickets up for grabs. What do you have to do? Email me on [email protected] with the subject heading “I WANNA MEXICAN NOW!” and you’ll be put into a draw. Good luck!
So, what’s so fabulous about MEXico? The cool, swish restaurant is set to offer Derby diners a new experience with a menu that has been developed by top US chef renowned for his Mexican cuisine, Johnny Hernandez, who recently cooked at the White House for President Obama’s Cinco de Mayo celebration.
On Thursday, guests will be able to try out Johnny’s new flavour of Mexican cuisine through his inspired menu of authentic mouth-watering dishes and an incredible drinks list.
Guests should make sure they try the MEXIco Puffy Taco, a signature dish that will surprise, delight and excite with every bite. Puffy, crispy, hand-pressed tortillas are served with pulled chicken tinga, shredded lettuce, tomatoes and freshly made guacamole. There really is nothing like it in the UK right now.
When it comes to drinks MEXIco is confident that it will own the Margarita, creating the very best classic and contemporary versions of this incredible cocktail. As well as these marvelous Margaritas guests will be able to try out one of MEXIco’s tequila flights, ideal for those getting to know Mexico’s favourite spirit or those just starting out their exploration.
Freddie Lock, of MEXIco, said: “We are looking forward to finally opening our doors the people of Derby and showcasing our array of food and drinks.
“Working with the legendary Johnny Hernandez, who is probably the finest Mexican cuisine chef in America, to create MEXIco has been amazing. His menu will give guests a real taste of the rich variety that Mexican cuisine has to offer, a change from the usual standard dishes, and we have a created a bar menu and cocktail list to match his creations.”
